took a break...

i think one of the last times i posted was at a point of feeling overwhelmed and a little frustration. time to do something before the little frustration became a lot of frustration.

i took a few days off from the computer (and a few other things) to regroup and re-prioritize. i do this about twice a year right about the time i begin to feel overwhelmed with what i perceive, at the time of overwhelmedness, as a lack of time. then i read this...

so, the "break" from a few things worked. just a simple step back and getting a refreshed perspective. refreshed priorities. feels so much better than a little, soon to be a lot of, frustration.

so you see...choosing TIME as my word for 2008 was perfect.

Recipe as requested (and Project 365: Jan 11)

After blogging our Lemony Snicket dinner I received a lot of requests for the Pumpkin Mousse recipe. Here it is:

Pumpkin Mousse Parfaits

• 1 1/2 c canned pumpkin pie filling
• 1/2 c (4 ounces) block style 1/3-less-fat cream cheese
• 3 c frozen fat-free whipped topping, thawed and divided
• 3/4 c gingersnap crumbs (about 12 cookies, finely crushed)
• 6 whole gingersnaps (for the top)

1. Combine pie filling and cream cheese in a large bowl; beat with a mixer at medium speed until smooth. Fold in 1 1/2 c whipped topping.

2. Spoon 1 tbsp gingersnap crumbs into each of 6 parfait glasses; top each with about 1/4 c pumpkin mixture and 2 tbsp whipped topping. Repeat layers once. Serve immediately, or cover and chill until ready to serve.

3. Optional: After layers are complete I added an extra dollop of the pumpkin mixture and a whole gingersnap on the very top.

one of my favorite things to get in the mail is photos! a variety of sizes! matte! people, places and things i love. this year i resolve to have pics processed at least once, probably twice, a month. 6 months of photos at one time takes way too long! i'm also going to try and order for a specific planned project instead of just ordering. i'm off to a good start!
