I modified the original recipe found at The Healthy Foodie. Simple to make. This just might be the best tuna salad ever. Download link below.
The Best Tuna Salad

- 1 tsp Dijon Mustard
- 1 tbsp Old Style whole grain mustard

- 1 pinch cayenne pepper
- 1 tsp lemon juice
- 12 oz solid white albacore, in water, drained
- 2 slices whole grain bread of your choice*
- a handful of leafy greens
Directions
- Combine the first 8 ingredients in a small mixing bowl and mix until well blended. Stir in drained tuna and mix well.
- Spread mixture onto one slice of bread. Garnish with leafy greens and top with second slice of bread.
- Serve immediately.
- Enjoy!
* I serve with Ezekiel Organic Sprouted Wheat bread, 1 slice for me and 2 slices for everyone else.

Hey Jill! How come I had never seen this before? Strange that I never got a notification of this post... or maybe I did but just never saw it. Sorry about that!
Anyhow, real glad I found your entry today, especially since you liked the recipe! :) Your version looks very yummy! That bread looks sooooooo good. Not sure I could've resisted having 2 slices. I admire your willpower! And isn't Greek yogurt the best? Don't know what I did before I discovered it. I now use it with everything...
Thanks much for linking back to me, Jill, I appreciate that!

Hi Sonia. LOL I link to you often. If not a recipe to share then as part of my weekly menu. Can't even count the number of times I've made your pizza with chicken, roasted red peppers and arugula. Maybe you'd consider doing a guest post :) While I'm here, when you say a can of tuna, what size? I may have used the wrong size and had to tweak the amount of other ingredients as a result.
How is P90X going? I just started round 3 while I wait for P90X2 to come out in the fall!
