Breakfast: Egg White Sandwich (4 egg whites, 1 tbs ground flax, 1 oz mozarella), 2 slices Ezekiel
Snack: 1 oz soy nuts, 1/2 oz dried cranberries
Lunch: Eggplant Lasagna with Grilled Chicken (leftovers again because it's that good!), pluot
Snack: Protein Bar
Dinner: Chicken Parmesan, steamed green beans
Wednesday
Breakfast: Protein Fruit Smoothie with Groud Flax

One of my favorite fall recipes is SUPER easy! It's great for people like me who don't quite enjoy the taste of regular pumpkin pie.
Pumpkin Fluff
1 can of pumpkin
1 small tub of Cool Whip (any of the varieties-Sugar Free, Regular, or Fat Free)
Combine both ingredients in a medium bowl and mixed until fluffy.
It's good to eat by itself, with graham crackers, or anything else you can imagine. It's also pretty low in calories too if you use the Fat Free Cool Whip!

I would love this cookbook! I need to get back to my clean eating ways...for my whole family! I go back to butternut squash with brown sugar...yummmmm. Then again I can make a rockin apple crisp!

I love to make soups! I just found a recipe for minestrone soup in the crock pot that is really tasty and super easy (which makes life a little easier for this mama)=)
